Just like the other tropical fruits, we work for the coconut with the cooperative Wayanad in Kerala, India. The high-stemmed coconut trees grow on the grounds of the organic farmers and other organic grounds. The cooperative collects part of the cocos collection for freeze-drying at the central processing site. Because the flesh is fairly firm, we opt for small cubes, 'bites' to make it easier for enthusiasts here.

Why the coconut? There is discussion about the (un)saturated fats in the coconut. At Adya we try to look at it from the Indian side. They have been eating and drinking coconut there for centuries. The coconuts have also reached islands from India with the various sea currents and reproduced. People also eat and drink coconut there. What would be wrong with coconut then?

Greasy or not, we also notice the minerals that a coconut contains. The coconut pieces in the Adya portions contain a lot of copper, magnesium, iron, phosphorus and potassium. If that's not power food. Natural energy, plant-based and above all.... a little less messing around at home with our ready to eat cubes!

Tips: use the coconut cubes in water, smoothies, shakes or as a topping with salads, pastries, ice cream, ... you name it!
